Plant Paradox Mug Cake

So this is basically my pancake in a cup but you can add to it to make it a dessert!

The mushed green banana or applesauce give the cake a fluffy texture so it’s not all dry. It’s really not that much fruit so don’t worry!

For the chocolate sauce I use Fourth and Heart’s chocolate ghee which you can find here.

It’s delicious and the only sugar is coconut sugar and dates. It costs $12 but the jar will last you for at least a year. I want to use it on my Plant Paradox Cheesecake!

Plant Paradox Mug Cake

Here is the recipe:

* 1/4 cup blanched almond flour (I use the one from Costco)

* 1/4 cup tapioca flour

* 1/8 cup green banana (mashed) or 1/8 cup unsweetened organic applesauce

* 1/2 tsp aluminum-free baking powder

* 1/4 tsp vanilla

* 1 pastured or omega 3 egg

*Optional to make it a chocolate cake: 1/2 Tbsp of chocolate ghee

Mix all ingredients really well. Microwave for 2 minutes in a large mug. Add any toppings you would like. I like to add a little more chocolate ghee and strawberries!

    You say the only sugar is coconut sugar and dates, but those two ingredients are not listed in the recipe. So, I’m confused.

      The chocolate sauce that I use has coconut sugar and dates. Not the mug cake!
