So this is basically my pancake in a cup but you can add to it to make it a dessert!
The mushed green banana or applesauce give the cake a fluffy texture so it’s not all dry. It’s really not that much fruit so don’t worry!
For the chocolate sauce I use Fourth and Heart’s chocolate ghee which you can find here.
It’s delicious and the only sugar is coconut sugar and dates. It costs $12 but the jar will last you for at least a year. I want to use it on my Plant Paradox Cheesecake!
Here is the recipe:
* 1/4 cup blanched almond flour (I use the one from Costco)
* 1/4 cup tapioca flour
* 1/8 cup green banana (mashed) or 1/8 cup unsweetened organic applesauce
* 1/2 tsp aluminum-free baking powder
* 1/4 tsp vanilla
* 1 pastured or omega 3 egg
*Optional to make it a chocolate cake: 1/2 Tbsp of chocolate ghee
Mix all ingredients really well. Microwave for 2 minutes in a large mug. Add any toppings you would like. I like to add a little more chocolate ghee and strawberries!
